PEA & MINTY SOUP
THIS IS SULLY’S FAVOURITE!
Archaeologists have unearthed peas in ancient Chinese tombs. The Chinese believe that their emperor, Shu Nung, discovered peas 5,000 years ago.
He is said to have wandered through the countryside collecting plants suitable for food or medicine.
Potential edibles were fed to a dog, then a servant and, if both survived, the Emperor himself would taste the new food.

Microwave:
Remove lid and place loosely on the top of the tub. Heat at 800W for 2 minutes. Remove and stir. Put back in for a further 2 minutes. Leave to stand for 1 minute.
Cooker:
Pour into a pan, over a medium heat bring to the boil stirring occasionally.

Garnish your soup with crispy bacon. Fry some streaky bacon whole until crispy. Dry in a paper towel and chop into little bits. Sprinkle over soup. You could also use chorizo or spicy sausage or add a little extra freshly chopped mint and a blob of cream.
