Chicken Skewers
INGREDIENTS

- 750g skinless chicken breast and thigh flillets cut into 3 cm cubes
- 1/4 cup extra virgin olive oil
- 4 garlic cloves crushed
- 1/4 cup lemon juice
- 1/2 red onion cut into quarters
- 1/2 yellow pepper cut bits roughly the same size as the chicken
- Onion chopped finely
- Sea salt and pepper
- 8 skewer soaked in water to stop burning

METHOD

This is such an easy recipe and the kids will love helping to skewer the chicken. They can also be cooked on a grill.
Method:
- Pop the chicken, olive oil, garlic, and lemon juice in a bowl, stir to combine and leave to marinate for at least an hour.
- Light the bbq.
- Separate each onion wedge into three pieces.
- Assemble the skewers by alternating with chicken, onion and pepper on each skewer, four of each.
- Pop onto the bbq and cook for ten minutes, turning and basting with the marinade throughout cooking.
- Careful of the bbq flaring with the oil.
- Serve with a big green salad and bbq roast spuds.
