Chicken Skewers

INGREDIENTS

  • 750g skinless chicken breast and thigh flillets cut into 3 cm cubes
  • 1/4 cup extra virgin olive oil
  • 4 garlic cloves crushed
  • 1/4 cup lemon juice
  • 1/2 red onion cut into quarters
  • 1/2 yellow pepper cut bits roughly the same size as the chicken
  • Onion chopped finely
  • Sea salt and pepper
  • 8 skewer soaked in water to stop burning

METHOD

This is such an easy recipe and the kids will love helping to skewer the chicken. They can also be cooked on a grill.

Method:

  • Pop the chicken, olive oil, garlic, and lemon juice in a bowl, stir to combine and leave to marinate for at least an hour.
  • Light the bbq.
  • Separate each onion wedge into three pieces.
  • Assemble the skewers by alternating with chicken, onion and pepper on each skewer, four of each.
  • Pop onto the bbq and cook for ten minutes, turning and basting with the marinade throughout cooking.
  • Careful of the bbq flaring with the oil.
  • Serve with a big green salad and bbq roast spuds.
