In my veg box this week I got fennel bulbs, so I went hunting for a fennel recipe and found this idea in my At Home with Jamie Oliver cookbook.
- Make an envelope using your tin foil, it should be well sealed and able to withstand the heat of the bbq.
- Slice your fennel and pop into foil bag, squeeze in the juice from half a lemon, and then pop the lemon half in with the fennel.
- Add in the sprig of thyme and rosemary and a good drizzle of olive oil, season with salt and pepper and then seal the bag.
- Place on a medium to hot bbq until cooked, about 25 minutes.
