Marinated Boned Leg Of Lamb For BBQ
INGREDIENTS

- 1 leg of lamb, boned by butcher
- 1 plastic bag
- Salt
Yogurt Marinade for Lamb:
- 500g pot of natural yoghurt
- 4 tblsp extra-virgin olive oil
- 2 large garlic cloves, crushed
- 2 tblsp mint leaves, freshly chopped
- Freshly ground pepper
- 1-2 tblsp ground cumin
- 1-2 tblsp coriander seeds

METHOD

Ivan and I did this at the Summer Luncheon in aid of Cork Cystic Fibrosis at Cork Week.
Method:
- Mix together, grinding spices if necessary.
- Put into plastic bag with lamb.
- Leave in fridge over night.
- Just before putting on the BBQ, sprinkle with a little salt.
- Cook to your taste, about 30 mins for pink.
