Marinated Boned Leg Of Lamb For BBQ

INGREDIENTS

  • 1 leg of lamb, boned by butcher
  • 1 plastic bag 
  • Salt 

Yogurt Marinade for Lamb:

  • 500g pot of natural yoghurt 
  • 4 tblsp extra-virgin olive oil 
  • 2 large garlic cloves, crushed 
  • 2 tblsp mint leaves, freshly chopped 
  • Freshly ground pepper 
  • 1-2 tblsp ground cumin 
  • 1-2 tblsp coriander seeds

METHOD

Ivan and I did this at the Summer Luncheon in aid of Cork Cystic Fibrosis at Cork Week.

Method:

  • Mix together, grinding spices if necessary.
  • Put into plastic bag with lamb.
  • Leave in fridge over night.
  • Just before putting on the BBQ, sprinkle with a little salt.
  • Cook to your taste, about 30 mins for pink.
