Cheeky Chicken Curry

INGREDIENTS

  • A good splash of oil
  • 1 onion, chopped
  • 1 clove of garlic, crushed
  • 1 knob of ginger, grated
  • 2 rooster potatoes, cubed (carrots/ sweet potato/ parsnips would work here too)
  • 1 t-spoon cumin, ground
  • ½ t-spoon cinimon, ground
  • 1 t-spoon coriander, ground
  • 1 t-spoon turmeric, ground
  • ½ t-spoon chilli flakes
  • ¼ t-spoon cloves, ground
  • 1 t-spoon salt
  • 1 t-spoon sugar
  • 1 t-spoon pepper
  • 1 tin tomato’s
  • 1 tin coconut milk
  • 1 tin chickpeas
  • 1 small tin sweet corn (or a cup of frozen peas)
  • 4 chicken breasts cut into strips
  • ½ lemon or lime, juiced
  • 1 little bunch of coriander, chopped
Cheeky Chicken Curry

METHOD

  • Heat the oil in a pot.
  • Add the chopped onion and soften in a over a low heat with the garlic and ginger.
  • Add the potatoes and cook for another few minutes, then add salt, pepper, spices and sugar and stir around to coat the veg with the spices.
  • Add the tin of tomatoes and reduce by half.
  • Add the coconut milk and reduce again.
  • Then add the chickpeas & sweet corn (or peas) and chicken.
  • Cook for 25-30 mins or until chicken is cooked through and the sauce has reduced to your liking :-)
  • Serve with naan breads and rice.
