Mad Hot Indian Madras Curry

INGREDIENTS

  • 800g of lean diced lamb, chicken or beef
  • 1 large onion - chopped chunky
  • 1 medium tomato - sliced
  • 2 cloves of garlic - crushed and chopped
  • Half tsp of fenugreek spice
  • Half tsp of cumin spice
  • Half tsp of coriander spice
  • Half tsp of turmeric
  • 5 to 6 red chilli's - chopped
  • Tsp of crushed dried chilli's
  • 280g jar of Madras curry paste
  • 200ml of water
  • 600g basmati rice
  • Pinch of salt
  • Tbsp olive oil
  • 5 naan bread (Garlic & Coriander is my Fav) or pitta bread is nice too

METHOD

  • Brown off the lamb for 5 mins in olive oil.
  • Add chunky chopped onions & crushed dried chilli
  • Add 2 cloves of garlic, fenugreek, cumin, corriander & turmeric
  • Add chopped chilli's
  • Cook for a further 10-15 mins on medium heat
  • Add jar of Madras curry paste, and 200ml of water
  • Also add sliced tomato
  • Cook for a further 10 mins
  • Cook Basmati rice as per instructions on the packet with a little salt
  • Heat naans or pitta's as per instruction on packet
