- A good knob of butter
- 1 medium onion, finely chopped
- 2 sticks of celery, finely chopped
- 1-1 1/2 pints (500-750ml) of tasty stock
- 1 bag of frozen peas (400-500g) **Best you can find!
- A couple of springs of mint leaves, chopped
- A good pinch of salt, pepper and sugar
- Melt the butter, add the onions and celery and sweat with some salt and pepper until translucent
- Add the stock and bring to a gentle boil
- Add the peas and cook until tender, about five minutes
- Liquidize until smooth
- Add chopped mint and season to taste
