HONEY, CARROT & CORIANDER SOUP

Native to Afghanistan, carrots were known to the Ancient Romans as an aphrodisiac. Caligula, the mad Emperor was best known for appointing his horse to consul, once invited the senators to a banquet at which only dishes containing carrots were served. Sadly no evidence of misbehaviour has been discovered!

Microwave:
Remove lid and place loosely on the top of the tub. Heat at 800W for 2 minutes. Remove and stir. Put back in for a further 2 minutes. Leave to stand for 1 minute.
Cooker:
Pour into a pan, over a medium heat bring to the boil stirring occasionally.

Make spiced mint oil. Just take a handful of fresh mint and chop finely. Add a pinch of garam masala* spice. Add a pinch of salt and pepper. Mix together and moisten with olive oil. Drizzle over soup just before serving.
*Available in any food store worth it's salt!
