It's pancake Tuesday!! You don't need any other excuse today to stuff your face all day long. We love to mix things up and make some savoury pancakes too. Try this delicious recipe to make tomato and basil pancakes. It's super easy to make using our Cully and Sully tomato and basil soup. We love stuffing them with a good handful of cheese, spinach and parma ham! Perfect dinner idea for the day that's in it :)
- 100g plain flour
- 2 eggs
- 150ml Cully and Sully tomato and basil soup
- 150ml milk
- 1 Tbsp melted butter
- Pinch of salt
In a jug whisk together the soup, milk and eggs. Sieve the four and salt into a bowl and gradually add the liquid beating all the time. Beat in the melted butter.
In a pan melt a little butter. Ladle in some mixture and spread evenly around the base of the pan. Once little bubbles begin to form its time to get flippin'
Add the spinach, grated cheese and parma ham at this point. Once the underside of the pancake beings to turn a golden brown, fold up the pancake and flip it over once more to give your filling an extra minute to cook.
Remove to a warm plate and enjoy :)
