This is a lovely email that we just received from Giana & Tom Ferguson in Gubbeen. We are using their nitrate-free bacon in our new beef stew. Giana and her family are amazing pioneers of good food in Ireland and are a wonderful family (check out www.gubbeen.com)

Our congratulations to you all - we had it last night it is fabulous, all things in the right place - enough gravy for a West COrk farmer's extra spuds and the smell when you are heating it fills the room with home cooking. We are so thrilled and honoured to be a part of it - thank you very much for bringing us into your creativity - being on the side of a beef stew packet is every girls dream - I love it and was hugely touched to be on the honour role!
