We were delighted to be able to celebrate coeliac awareness week last week. Did you know that all of our soups are gluten-free? To celebrate we served up a delicious gluten-free lunch, our tomato and basil soup with a gluten-free oat loaf and a summer tomato salad. Check out the recipe for a quick and easy oat loaf which tastes almost identical to soda bread:

  • 500g Natural yoghurt
  • 1 Egg
  • 350g Porridge Oats
  • 2 TBSP Milk
  • 1 tsp Salt
  • 2 tsp Baking Soda
  • Pumpkin seeds (optional)

Preheat the oven to 180 degrees. In a bowl beat together the yoghurt, egg and milk. Add the baking soda and porridge oats and salt and combine to form a dough. Transfer to the greased loaf tin and pop in the oven for approx 50 mins to one hour. Remove from the tin and place the loaf back in the oven for 5 mins to crisp the crust.

Leave to cool for a few minutes before slicing. Enjoy with copious amounts of butter :)
