Ingredients
1 tablespoon of olive oil
1 tablespoon of pumpkin seed oil
1 tablespoon of sunflower oil
1 tablespoon of sherry vinegar
A pinch of salt and a twist of pepper
1/4 teaspoon of Dijon mustard

Method
Put all the ingredients in a jam jar with a good lid and shake vigorously.
Shake again just before serving.
